Berry Smoothie Bowl

Serves: 1 Prep: 5 mins


Ingredients

  • 1 medium banana

  • 1 cup frozen mixed berries

  • 1/3 medium courgette (zucchini)

  • 1/8 cup almond milk (adjust to your preferred consistency)

  • 1 tbsp protein powder

  • 50g homemade granola (see recipe)


Method

  1. Cut courgette into cubes, break banana into pieces and add them all to blender along with frozen berries.

  2. Pour almond milk on top of ingredients then add your protein powder.

  3. Blend all ingredients together, adding a little extra almond milk if your blender is struggling to process the mix. Remember we want to avoid making it too runny though, as it should be similar to an ice cream consistency so you can easily eat it with a spoon. It may depend on your type of blender for how thick your mixture can be.

  4. Pour mixture into a bowl and top with homemade granola.
